We were hitting the MaxClients setting in apache which was still at the default of a measly 150 on the new hosting server. I've increased that now and will see if that solves things. Most requests were handled fast enough for this not to be noticable, but you could get unlucky and have to wait a little longer for a thread to become available.
ah, back to ~60 page renders per second again :) problem seems to be solved!
